What do black olives look like when they are first harvested?

I've grown accustomed to canned black olives being shiny and black.





My new "natural" black olives are dark brown.





Did their color change from black to brown without preservatives, or do the evil food overlords add black coloring to make olives darker?

They don't keep very long, so they can them %26amp; kill any bacteria by heating and sealing the can.





The quasi black/brown/green olives were picked before they were ripe so they will have a longer shelf life than a fully ripe olive.|||They're green. The black ones are just pickled.|||Green|||Kind of green
